The standard cuvees of 1991 Cabernet Sauvignon and 1991 Merlot display more aromatics and intense flavors than any red wine offering from Joseph Phelps since the mid-eighties. The 1991 Cabernet Sauvignon displays an opaque purple color, a big, spicy, cassis-scented nose, rich, medium to full-bodied flavors, moderate tannin, good but not excessive acidity, and a compact, impressive finish. Accessible now, it promises to last for 14-15 years. This could turn out to be one of the best standard Cabernet Sauvignon cuvees Joseph Phelps has made since the sensational 1975. (RP)
