(04/2004) The 2001 Jayson is a rich 'black fruit' wine, with a fat core of blueberries, blackberries, and currants. The new French oak melds with the ripe fruity character; giving the wine an almost chocolaty flavor. The tannins finish soft, deep, and supple. This wine is harvested and vinified in the same manner as the Pahlmeyer. The whole berry fruit comes from hand picked lots and was fermented in short, open-topped stainless steel tanks and cold soaked, using native yeasts. The wine then continued through malolactic fermentation in 100% new French oak barrels for 7 months and was bottled neither fined nor filtered.
