Granite de Clisson is a special bottling done by a select few producers of Muscadet who work in the most traditional methods. It is a selection of old vines planted in granite (which accounts for only 5% of the soil in the entire AOC), which undergo a 24 month elevage sur lie. 2005 marks the first time Marc has participated in this project. TheToisieme Niveau...The Third Level is the organization of vigneron in Muscadet who are producing wines that stay on the lees for an extended period of time. The organization require 18 months on the lees and that grapes be hand harvested at no more than 47hh. The wines are made with ambient yeast and do not go into oak! Both Marc Olivier and Pierre Luneau leave their wines longer and harvest at lower yields. Pierre made his first wine in this style in 2001 and leaves his on lees for 30 months. The intention of the movement is raise the bar in Muscadet and really show off what melon de borgonge is capable of when treated like any other great varietal. The wines becomes rich but maintain a powerful minerality...really I would drink these over Chablis in a heartbeat.
