Crisp, with green plum flavors, this shows plenty of immediate freshness, very open. The structure is soft, with creaminess and toast, the hints of minerality and austerity initially kept at arms length, then gradually pushing forward into the delicious finale.
An overtly spicy and mildly exotic nose that is a mix of floral, green and yellow fruit and sea breeze slides into big, rich and intense flavors that are not especially fine though there is admirable concentration and ample dry extract. This is round, frank and attractive with less elegance than the Montmains but even more depth and intensity.
The Fevre 2006 Chablis Vaillons possesses bright fresh lime and ripe nectarine fruit, as well as deep suggestions of chicken and fish stock. There is a certain firmness of texture, and an overt impression of chalkiness along with the aforementioned carnal and piscine elements inform the finish. This as yet rather restrained but already fascinatingly delicious wine should blossom in bottle, and can be counted on to demonstrate over the next 4-6 years the sorts of peculiar Chablis virtues that can make one scratch one’s head in wonder that it comes from grapes. Strong oyster shell minerality on the nose. Dense and smooth but juicy and closed; in a tight, dry style but with a captivating delicate sweetness lurking. Finishes with subtle persistence.
