The lovely valley of the Senne is the only place (together with the Pajottenland) where Lambic, Kriek and Geuze are still brewed in the traditional manner. Wild yeasts, such as Bretanomyces Bruxellensis and Bretanomyces Lambicus, are evident in this complex brew, and these micro-organisms are only found in the open air in the Senne valley. Additionally, this Kriek is made using only whole cherries. The result is a very special bottle of beer, to be sipped slowly, with cheeses and nuts, as a beer deserving the utmost contemplation.
