Fruit for the 2008 "Jayson" is 100% estate, from the Pahlmeyer Wayfarer Farm Vineyard. Each vintage, winemaker Erin Green crafts the "Jayson" Pinot Noir from lots left over after Pahlmeyer's flagship cuvees are finalized, and it is produced according to the same methods and standards as Pahlmeyer. The 2008 began fermentation with native wild yeasts in open-top fermenters then transfered to barrel where it completed primary and secondary fermentation. It was aged in 67% new French oak for one year and bottled unfined and unfiltered. Winemaker's notes: "Medium ruby in color, this wine has a sumptuous nose of bright red cherry pie, plum, pomegranate and black raspberries with earth, sassafras and fresh sweet fennel. It is full-bodied on the palate with soft tannins and a long, lingering finish."
