Le Trou du Diable is one of Canada's rising star breweries, located in Shawinigan, about half way between Montreal and Quebec City. Fermented with wild yeast and brettanomyces and aged for six months in wine barrels that used to hold Dolce, the botrytized sweet wine from Far Niente. The resulting wine is approachably funky and sour, with notes of honey, vanilla, apricot and leather. Delicious!
