Jon and Susan Pey are talented, passionate vignerons with access to some incredible vineyard sources throughout Northern California. They produce a collection of wines that over-deliver in quality for the price under their various boutique labels. Textbook's 2012 Cabernet Sauvignon was sourced from the Napa Valley AVAs of Oak Knoll, St. Helena, and Oakville. It includes 6% Merlot and was aged in 35% French oak for 15 months before bottling. This Cabernet will reward some short-term cellaring, but it is certainly ready to flaunt the quality of the 2012 vintage which holds excellent value at this entry-level price point.

    Mention the word "textbook" and aside from the "textbook" definition, I flashback a decade or so to my poor niece Emily having to lug the equivalent of twenty pounds of school books in her beast of a backpack during the seventh grade. Fortunately times have changed, and today, with handheld tablets no one needs to be a human pack mule to get a decent education. Of course the best education for a student of wine is an uncorked bottle and a sparkling glass, allowing the winemaking talents of folks like Jonathan and Susan Pey to shine forth. With extensive experience in Bordeaux, Burgundy and the restaurant culture, they bring true sense and sensibility to their passion for wine, and their "newly published" Textbook Cabernet Sauvignon is defined by lovely aromas of ripe, juicy plums, succulent blackberries, licorice and camphor framed by subtly spicy oak, elegant tannins and scrumptious, mouthwatering acidity. An incredible Cabernet value, serve this throughout the holidays and into 2015. No homework required!

    Textbook consistently produces great value wines, and this 2012 Napa Cabernet Sauvignon is no exception. Aromas of mocha, toasty oak, and blackberry emerge from the glass. Cinnamon, raspberry, and dark chocolate are pronounced on the palate. There is a fullness in body and richness in texture that make this wine a fantastic deal for just $20.

    Textbook has all the qualities one expects from a lush Napa Cabernet, but at a price point that makes for an extremely smart buy. Perfumed with hints of blackberry, plum and dark chocolate, this wine is rich in texture, balanced and a joy to drink. Excellent when paired with a Gruyere cheeseburger, braised ribs or simply with a bit of aged Gouda.

    Looking for a well made California Cabernet Sauvignon to enjoy right now? Here’s one that needs no more time than it takes to buy a bottle, carry it home, and pull the cork. While round and open, it also shows exquisite balance, and boasts an attractive nose of plum, charcoal, and bitter chocolate, accented by a subtle hint of mint. Modest tannins lead to a dry, focused finish which dovetails down to a slight recurrence of the bitter chocolate note.
