Tradición keeps releasing unfiltered, 3,000-bottle lots of a very old (average 10 years under 'flor') Fino from their 'soleras'. I've drunk this wine quite frequently over the past 18 months and it's going from strength to strength. The nose is full of aromas; chalk, hay and straw, esparto grass, brine, very strong green olives and sea breeze. The palate is medium to full-bodied and unctuous reflecting a wine that has consumed the glycerin by the effect of the flor and then gained volume from the dead yeasts. This is a serious, powerful, concentrated Fino that is stunning together with 'jamón'. (JG)
