Sun Liquor has taken the traditional brew pub model and turned up the heat. This ultra small scale distiller also runs a wonderful little bar and restaurant in Seattle, WA. Opening in 2011, they were devoted to making spirits that the loved to pour in their own bar. In a distinctive and well thoughout package, Sun Liquor is definitely one of the distillers to be watching right now. The stupendous barrel aged rum from Sun Liquor is one of the freshest cleanest pure cane juice distillates I've ever tasted. The rum is distilled on their small copper pot stills after a slow ten day fermentation. It's then aged for a minimum of two years in american oak barrels and french oak sherry butts. The result is a clean agricole style with all the fruit a life you'd expect, but very little of the funky potty side. Very well done!
