Polished to 80%. First impression of this complex sake is the rich and full aromas of hazelnut, burnt caramel and dried fruit. It has a developed round mouthfeel with a finish full of orange zest and clean acidity to give the sake a wonderful balance. An aged sake, closer to an exotic sherry, and one of the coolest things I've ever tasted. Interesting and delicious. The Ooki has some of the nut-like flavors of a Amontillado but that is the only similarity to sherry. There is also a hint of mushrooms along with a clean nice finish.
