Hattannishiki rice polished to 40%.This pretty Junmai Daiginjo has a lovely nose full of banana, melon and star anise. The all natural brewing process gives this sake a bright fresh mouth feel full of plum, lime, green banana and soft minerals with a clean dry finish, making this Junmai Daiginjo extremely food friendly. The brewer continues to make sake the same way in a facility built in 1790, with the original ropes and pulleys used to move the rice and other equipment used in this delicate process. Everything is done by hand. This is likely one of the most artisanal sakes obtainable in the US.
