Proprietor Gabriel Acha has extensively researched old recipes for family Vermouth in Pais Vasco, and came across two recipes that he has worked on perfecting, the result being Atxa Vermouth Blanco and Tinto. The Blanco is slightly drier and lighter on its feet, still with lovely spice and floral notes and the freshness that comes from having white wine as the base. Great stuff served over rocks with a lemon wedge, perhaps a splash of soda, or alternatively as part of a cocktail recipe.
