Here's a suggestion: The sparkling wines of Limoux actually predate those of Champagne by at least a century, when a Benedictine monk in 1531 accidentally created the first brut wine in his cellar. Almost 600 years later, and they're still at it, with the Cuvée Eugenie, a joyfully effervescent expression named for an illustrious lady in the family. Combining a delicate mousse texture with aromas of white flowers, green apple and citrus fruit, this lightly toasty wine is the perfect, well-priced sparkling candidate for virtually any occasion where bubbles are called for.
