The Merlot dominated wine from the estate, the 2014 Flying Pig incorporates 40% Cabernet Franc and 10% Cabernet Sauvignon. Like all of the Bordeaux blends here, it’s raised in puncheons, with a small amount being new. This full-bodied barrel sample has a rich, voluptuous style as well as textbook cassis, lead pencil shavings, cedar and graphite aromas and flavors. I love its overall density and depth, and it while it should drink nicely out of the gate, it should evolve gracefully as well. (JD)
