The Merlot dominated wine from the estate, the 2014 Flying Pig incorporates 40% Cabernet Franc and 10% Cabernet Sauvignon. Like all of the Bordeaux blends here, it’s raised in puncheons, with a small amount being new. This full-bodied barrel sample has a rich, voluptuous style as well as textbook cassis, lead pencil shavings, cedar and graphite aromas and flavors. I love its overall density and depth, and it while it should drink nicely out of the gate, it should evolve gracefully as well. (JD)
Bold red currant and bacon fat aromas lead to densely layered plum, licorice and black olive flavors that finish with big but refined tannins. (TF)
