An impressive, single vineyard (located in Oyon) gran reserva, from what is steadily becoming a favorite vintage of the aughts for me in 2008. El Coto de Imaz Gran Reserva initially takes some coaxing before it begins showing its stuff. While on day one, the wine showed a decidedly savory aromatic profile, slightly rustic and beefy, with tasty dark fruit leather on the palate, by day two the wine had opened up considerably. Somehow the fruit came into beltter focus, the savory development and earthiness receded into the background after a day of opening. I would therefore suggest at least a one hour decant, and then pair with whatever cut of lamb is available. Terrific gran reserva.
