This special blend, which took the brewery nearly 40 years to perfect, is one of their most limited releases. The two varietals, 500 Mangoku and Yamadanishiki, are polished to 55% before a meticulous and brewing process. The result is an ultra clean and elegant Niigata style Ginjo, but with an wonderful intensity and depth that unique to Koshi No Kanbai. This juxatoposition between crisp Niigata style and the subtle umami character in this sake makes it great for pairing with powerful flavors like Uni and Japanese Mackeral - but also works with dense rich flavors of dishes Tonkatsu Ramen.
