The 2008 Blanc de Blancs Brut Tendresse is 100% Chardonnay vinified in oak. The wine opens with a deep, clear and fresh as well as intense and complex bouquet of ripe and stewed apples, cinnamon, chalk, grey bread and toast. Full-bodied yet fine, straight, very dry and fresh on the palate (the wine only partly underwent malolactic fermentation), this is a remarkable, pure and elegant Blanc de Blancs that possesses a slightly oxidative style with a very clear and well-structured finish. This sparkler is a pretty complex aperitif and should go well with seafood and fish. This was disgorged in December 2015 and has a dosage of 4.7 grams per liter. (SR)
