The 2015 Vaillons chez Dauvissat is every bit as good as the Séchet this year, but it is a bit more reserved in personality out of the blocks and will want a couple of years’ worth of bottle age to blossom. The bouquet is very promising, offering up scents of apple, lemon, white flowers, beeswax, chalky soil tones and just a hint of vanillin oak. On the palate the wine is deep, pure and very refined in structure, with a lovely core, excellent focus and grip and outstanding backend mineral drive and cut on the vibrant and still modestly youthful finish. A cool, pure and overtly spicy, green apple and floral-suffused nose that offers good Chablis character leads to rich, concentrated and relatively powerful middle weight flavors while delivering fine length on the dry and saline-inflected finale. This reasonably precise and well-balanced effort should be capable of rewarding 5 to 8 years of cellaring while being sufficiently forward to be approached in its youth. Recommended.
Pale yellow. Reticent aromas of menthol, oatmeal and white truffle, with stone and citrus fruit notes in the deep background. Silky on entry, then quite firm in the middle, conveying an impression of strong soil character--and sound acidity--to its flavors of citrus fruits, minerals and oatmeal. This rather powerful wine finishes very long and youthful, a tad aggressive but not dry. Dauvissat told me he's already drinking this wine but I believe that it's destined for a slow and graceful evolution in bottle. (ST)
