This spectacular single barrel from the exceptional craft distillery in Kirby, WY is easily one of the best single casks we've ever received from a true craft manufacturer of bourbon whiskey. Wyoming Whiskey and its Master Distiller, Sam Mead, really know what they're doing over there. They are able to source their grain from local farms, age it properly in full size casks and offer an extremely affordable price even compared to industrial distillers in Kentucky and Indiana. We've tasted these over the last few years and found incredible improvements in their standard release as the average age increase, but we've never come across a craft whiskey quite as special. The fine distillery in Kirby is making wheated bourbons very much in the style of Van Winkle, Old Fitzgerald, Weller, and Maker's, but of course WW is different for in one very particular way, they don't heat the warehouses. That means that the whiskey is subjected to incredible weather extremes that exist in Kirby. The winters are much colder than Kentucky, so you don't get the same intensity of sweet oak early stages; instead the long slow maturation means more complexity. They may not age as quickly as their KY counterparts, but Wyoming Whiskey is without a doubt in the top tier of the nation's craft distillers. We're lucky to be the only retailer in California to receive a single cask of this special whiskey and after 6.5 long years in Kirby this whisky is showing astounding depth and complexity.

    I've enjoyed the Wyoming Whiskey and now count them as one of the best of the recent craft whiskey boom. They sent us many samples to try and while all were interesting NONE had the incredible depth and maturity of this special cask. A massive nose of freshly shucked corn, candied apricots, lacquer box and Tahitian vanilla. This one loves air and with some time you get some real flavor development. Fresh cacao nibs, freshly cut pine, barrel spice, walnuts and honey. On the palate, tons of sweet corny grain at the front. More candied stone fruit and a rich texture that remains lifted. A twinge of spice runs down the mid palate to keep it from being cloying. The finish is dry and brings big barrel spice, soft old drift wood and a slight leafy forest floor. While I'm extremely tempted to compare this directly to some of our Weller picks, we're really treading into new ground here. A triumph of a first showing from our friends in Kirby.

    Wyoming Whiskey? I have to admit that I am a tough sell, being from the land of bluegrass and bourbon! Still, this K&L barrel is something to behold, with its deep amber coloring, slightly softer nose, and the beauty of the winter wheat showing through. Also, baking spices of cinnamon and allspice await you in the glass. Don't let the nose fool you. On the palate it has a kick like a wild mustang. Big and rich with just the right burn to keep you coming back for more, highlighted by citrus peel and honeysuckle on this super long finish. I tip my hat to you, Wyoming. Mighty fine whiskey y'all got there.

    Going bonkers over this wheated whiskey... Wanna support small, local, hand crafted operations? Here's your chance. These guys built an old school distillery, similar to the old Maker's, where they strictly use local grain for a recipe similar to some of the most sought-after brands. This juice is 6+ years old, the oldest they've ever bottled, and it's only for K & L.
