The young Sébastien Riffault is one of Sancerre's rising stars, farming five hectares of land biodynamically, plowing the vines and harvesting by hands. Les Quarterons is a five-hectare plot of silex, clay and limestone soils. It faces south/southeast with a 20% slope. Fermented in stainless, the wine is is aged sur lie for 18 months and undergoes full malo. From the importer: "Les Quarterons is the most traditional of Sébastien's white wines. Floral and flinty with a defined yeasty character on the nose. It feels soft and full in the mouth, balancing the zesty minerality and flavors of lemon oil, yellow apple, mineral and [a] hint of fresh herbs."
