Pressed in winter and stored in cold conditions until the following fall, it marries unparalleled balance with an exquisite patina of complex fall flavors. The wonderful acidity, balanced sweet savory bouquet and great texture keep this aged nama fresh and awesomely complex. It's never funky or earthy like other aged unpasteurized offerings and unlike most nama this one is designed to go the distance and will continue to improve for many months or years in the cellar. It goes best with rich fall dishes, roasted vegetables or grilled sausages, as well as anything with a bit of umami.
