Organically grown on the estate vineyard, then aged for 27 months in 100% new French oak. About the vintage and the bottling from the winery: "June 29, 2011 - Howell Mountain Cabernet wines are usually not described as elegant and are more often known for their power, intensity and need of cellar aging. Our 2007 Estate Cabernet, from the vines surrounding the winery, has captured the mountain character but also has an evolved, elegance that combines old world with new. Showing aromas of dark fruit, oak and earthy characters, this wine is a great example of what happens when patience is practiced in winemaking. The extended barrel and bottle aging has allowed a more mature wine to develop. Instead of rough, hard tannins, there is a maturity to the mouth-feel, creating a velvety texture. That structure is the backbone that carries the long lasting flavors of blackberries, spice, cassis, dark chocolate and leather. The tannins and acidity create a long finish with ending hints of a berry cordial or ripe fruit syrup."
