With a high elevation and mild climate, there is a natural tendency in the grapes to build a deep acid structure and flavor profile that truly need bottle age to show its best--and this is just how founder and Chablis-lover Fred McCrea would have it. These are food-friendly, structured Chardonnays that will reward cellartime.
