Allen Meadows writes: "Philippe Naddef directs this 5 ha domaine from newly renovated premises purchased...in Fixin; he was formerly situated in the little hamlet of Couchey, which is sandwiched between Marsannay-la-Côte to the north and Fixin to the south. It is a two story affair that permits him to work entirely by gravity. The approach to vinification is definitely particular and involves a relatively long 10 days of cold maceration working with a selection of cultured yeasts. Enzymes are used for both extraction and clarification and is abetted by frequent punch downs of 4 times per day, twice by a mechanical arm and twice manually. However, there are no pump overs and the total cuvaison lasts between 20 and 25 days. Virtually all of the press wine is added back after the new wine is racked off (after 24 hours of settling) into barrels that average between 25 and 100% new, depending on the wine. The total élevage period lasts between 15 to 18 months and the wine is then bottled at the domaine, generally without fining or filtration. Interestingly, Naddef says that he never varies the percentage of new oak because of the vintage though he will vary the élevage period."
