Here’s a rich, solid Cab from a good winery with a proven track record. Made in the Bordeaux style, with 72% Cabernet Sauvignon, 26% Merlot and 2% Cabernet Franc, it’s got ripe black-currant and plum aromas and flavors and a solid dose of toasty new French oak. Very balanced and complex. The tannins are soft enough to drink it tonight, but it can also age, if you want.
Bright ruby. Oaky aromas of black fruits, dark chocolate and mint. Very ripe, thick and rich; lovely sweetness and breadth of texture. Grew lusher as it opened in the glass. Enticing flavor of black raspberry. Finishes very long, with big, ripe tannins. A lovely example of the vintage. (ST)
The dense ruby/purple-colored 1997 Profile Proprietary Red Wine offers a ripe, sweet nose of licorice, blackberry, cassis, and toast. Medium to full-bodied, with moderately high tannin, abundant new oak, and a long, concentrated finish... (RP)
Starts out smooth and rich, with creamy mocha and currant flavors. Concentrated and focused, the tannins gain weight on the finish, giving it a chewy aftertaste.
