Palo cortado is the rarest style of sherry. Basically it starts out with a thin layer of flor and is initially designated to be an amontillado. However, the flor dies off quicker than expected and therefore the wine is put into a separate solera consisting of similarly evolved wines. Expect a wine that is a bit richer than amontillado, but retains some of the salty, tangy qualities. This particular example is a richer palo cortado to be sure, with an assertive, spicy quality yet still plenty of freshness and style.

    Lots of textural interest here for Sherry fans. This is a Palo Cortado that lives up to its name, combining the elegance of an Amontillado with some of the richness and the flavor signature of an Oloroso. Walnut, in a very dry, woodsy fashion, caramel, leather and raisin all make their appearance here. The finish is more austere, focused and dry than most true Olorosos would display; it never picks up the full sweetness and weight. Roast nuts and hard or blue cheeses play real nice with this.
