And with the youngest vines (Syrah) on his more than hundred acre property south of Perpignan having passed their first decade, he will no doubt be adjusting his palette to accommodate their fruit’s increasing usefulness. What hasn’t changed here is not just Montes’ searching quality-consciousness but also his determination to give each wine the elevage he thinks it deserves, and even after bottling not to release any wine until he thinks is best for it, even when that might seem surprisingly late."
