This wine was produced form the best grapes harvested from the most renowned region of Valtellina Superiore. It is produced only in limited quantities in the best vintages. The most ripe grapes are immediately pressed while the less fruitful ones (about 50%) are dried in lofts until the end of January. These grapes are then pressed and added to the first pressing in order to make a wine richer in alcohol and above all flavor. Matured in small oak barrels for about one year, the color of Corte di Cama is like the dark red of pomegranate, its aroma distinctive and refined, its taste warm and dry, rightly tannic, balanced. It combines excellently with roasted red meat, game and matured cheeses.
