This producer goes to phenomenal lengths to produce the cleanest sake possible. Some might even say they go over the top. When the temperature falls below 14 degrees Fahrenheit, they build an igloo. Inside this structure the air is a constant 28 degrees F, with 90% humidity and no wind, and most importantly, free of harmful bacteria. Then, because they do not like the bitter compounds that result when the sake is pressed from the lees, they put it into canvas bags that are hung to slowly drip the "free run" sake. Very fragrant, very lovely, very elegant, very clean, very subtle. All the trouble shows in the glass. Expensive but well worth it. (Keith Wollenberg, K&L Wines)

    Takasago Brewery's Divine Droplets is a masterclass in elegance. When served chilled, you will be treated to delicate aromas of melon, grape, lychee and sugar cane with touches of honey and pear. As the sake warms its fruit flavor intensifies, but I prefer its subtlety when enjoyed well chilled. The texture can be described as light bodied with a creamy, silky viscosity. Understated acidity and umami further contribute to its refinement. Deserving of its name, Divine Droplets tastes heavenly.
