The NV Brut Majeur comes from an estate just beside Bollinger and is a 40/40 split of Pinot Noir and Chardonnay with the balance Pinot Meunier. Aged 30 months on lees with 7 grams of dosage, it has a crisp, focused, even chiseled style to go with lovely notes of citrus, lemon curd, and white flowers. Drink this vibrant beauty over the coming 5-6 years.

Light yellow. Lively, sharply focused lemon and green apple aromas pick up deeper melon and peach qualities with air. Spicy and precise on the palate, offering juicy citrus fruit and honeysuckle flavors and a touch of candied fig. Powerful yet lively, finishing with strong punch and building mineral and floral qualities. This suave Champagne has the heft to handle rich foods and the tension to work by itself. (JR)

The Brut Majeur bottling is the workhorse wine in the Ayala portfolio and the new release is lovely. The wine is made from a cépages of forty percent each of chardonnay and pinot noir and twenty percent pinot meunier. The current bottling is from the base year of 2014 and was disgorged in September of 2017, with twenty-five percent of the blend made up of reserve wines from the previous two years of 2012 and 2013. The finishing dosage was seven grams per liter. The wine offers up a bright and zesty nose of lemon, apple, lovely minerality, white flowers, a nice touch of salinity and a topnote of citrus zest. On the palate the wine is crisp, full-bodied, focused and well-balanced, with a perfectly respectable core, fine mousse and a long, vibrant and bouncy finish. This is a lovely bottle that will be even better with a year or two in the cellar to really blossom from behind its lovely structural chassis. (Drink between 2018-2035) 90+
