The legendary Stag's Leap Wine Cellars began, back in 1969, when Warren Winiarski tasted Nathan Fay's 1968 homemade cab. What Winiarski tasted was a classic combination of fruit and structure, suppleness and balance. In 1986 Nathan Fay offered to sell his inspiring vineyard to the Winiarskis and in his honor they called it "Fay." Still classic, the 2004 vintage of Stag's Leap Wine Cellars "Fay" Cabernet Sauvignon has an evocative perfume, heavy with violets, dark cherry and licorice. As the wine opens, flavors of plum, chocolate and candied ginger combine with earthy notes of sandalwood and tobacco. Soft tannins and a silky mouthfeel are this wine's calling card, making it easy to enjoy in its youth and a true delight to those willing to hold it.
