This 10-year Cossart Gordon is a single-varietal Bual bottling that was aged in Madeira's traditional "estufagem" process. The just-made fortified wine is placed in casks in the highest and hottest loft of their lodge in Funchal. Over the course of the 10-year ageing process, the casks are bought down to progressively cooler middle and then lower floors of the lodge as the wine stabilizes. The producer describes: "Clear, amber colour with tinges of gold and very strong legs; a bouquet of prunes, almond, vanilla, wood and toffee with a smooth, medium-sweet finish and an excellent balance between the fruit and acidity." The best part of investing in a bottle of good Madeira is that it lasts for several months in the refrigerator after opening, so even an occasional half glass when the mood strikes is possible. Try pairing it with hard cheeses, milk chocolate, fruit, or tea cakes for an elegant Old World delight.
