Always pretty, always polished, St. Jean's '05 Cinq Cepages is a solid red wine that drinks well now and should develop with a few years in the cellar. It's dry and firm in tannins, with flavors of blackberries, cassis and new smoky oak, marked by a soft texture of finely ground tannins.
Black oak tannins mask the chewy, blue fruit of this wine, yielding slowly until it melds into roasted plum flavors, spicy, ripe and still deep blue. It's a plump wine with substance, gaining depth from its blend of five Bordeaux varieties. Cellar-worthy, this requires decanting to bring up its floral scent of violets. For grilled lamb.
The medium to full-bodied, dark ruby/purple-tinged 2005 Cinq Cepages Proprietary Red Wine (83% Cabernet Sauvignon) reveals a certain austerity along with complex notes of roasted herbs, sweet red and black currants, and a dusty, loamy character. It will benefit from another year or so of bottle age, and should keep for 10 years. (RP)
