Tasted at BI Wine & Spirits' 10-Year-On tasting, the 2007 Haut Bailly has a beautiful, quintessential Pessac bouquet with touches of warm gravel filtering through the black fruit. The palate is medium-bodied with impressive, tightly knit black fruit laced with cedar and white pepper. There is superb weight in this 2007 considering the vintage, doling out fine mineralité on the persistent finish. Very fine, but I would actually wait another couple of years before broaching. (NM)
A dense wine, very much in the line of powerful wines from Haut-Bailly. Flavors of bitter chocolate, sweet berry fruits and richness are dominant, the acidity a fine balancing act to give a burst of freshness. (RV)
Shows complex aromas of dark fruits, with bitter chocolate and floral notes. Full-bodied, with pretty, silky tannins. Very well-integrated and long. Builds on the palate. (JS)
