This has the unmistakable delicacy and softness of El Maestro Sierra’s house style. Aged under the veil of flor for four years, it has strong acidity, a deliciously abrasive texture reminiscent of the albariza soils and a spicy finish that invites you to drink the whole bottle with a plate of pescaíto frito.
The non-vintage Fino offers up aromas and flavors of sea salt and roasted nuts. It is excellent as an aperitif or as an accompaniment to sushi. (JM)
More yeasty and a touch honeyed than the more recently bottled example, gently spicy. Rich and gloriously full on the palate but still with those straight edges of salinity. Has gained breadth but not lost precision. 17/20 points (JH)
Bright and floral, with honeysuckle and chamomile notes leading the way for white peach and fleur de sel hints. The slightly rounded edge makes this a good intro to fino for those new to Sherry. (JM, Web Only-2018)
