Gorgeous, elegant and ageworthy. With a softly tannic structure, it’s drinkable now, but should age and gain complexity for 10 years. Dry and smooth, it has complex flavors of blackberries, black cherries, currants, red licorice, cola and oak. Give it some time to breathe.
Selected from two vineyards within the Rubicon Estate, Chateau and Cohn, Cask is aged in 500-liter oak puncheons, the type of barrel John Daniel, Jr., used for his Inglenook wines of the 1950s. The 2007's red cherry flavors come up through deep earth and fruity mushroom tones. Oak aging has mellowed the earth tones into a lovely tannic grip. It's dark and steaky, enjoyable now and over the next several years.
