The more limited production offerings include the 2007 Cabernet Sauvignon Reserve (700 cases produced). Its opaque purple color is followed by a big, layered mouthfeel with intense richness suggestive of creme de cassis, charcoal, tobacco leaf, and hints of truffles and asphalt. Full-bodied with excellent precision as well as freshness, this complex effort requires 2-3 years of cellaring, and should keep for 25+ years. As I have written in the past, Michael Keenan has done a fabulous job of ratcheting up the quality of the wines from this Spring Mountain estate. Full ruby-red. Tarry blackberry, black cherry, licorice and graphite on the nose, lifted by a note of violet. Juicy and vibrant but primary and tight, with a medicinal reserve to the black fruit, licorice and mineral flavors. Precise and fine-grained but youthfully folded in on itself. Finishes with suave, mouthcoating tannins and lovely lift. Enjoy the basic 2007 cabernet while allowing this one more time to evolve in the bottle.
