This is a new wine that the winemaker calls the 'freestyle' of the winery's main Cabernet, Les Pavots. 47% Merlot, 26% Cabernet Franc, 24% Cabernet Sauvignon, and 3% Petit Verdot. Shows lots of generous fruit with chocolate, lilies and other flowers. Full and round, velvety tannins with lots of strawberry character too. This is gorgeous. Drink it but will improve.
Bright ruby. Higher pitched than the Pavots, displaying intense redcurrant and pomegranate scents and suave floral and spice nuances. Tangy and focused, offering tightly wound red berry flavors and a deeper note of bitter cherry on the back half. The spicy finish features very good tangy cut. Give this a little air. (ST)
The estate's second wine, the 2008 L’Esprit des Pavots Proprietary Red, is composed of 47% Merlot, 26% Cabernet Franc, 24% Cabernet Sauvignon and the rest Petit Verdot. Also outstanding, it is a more forward effort that is meant to be drunk in its first 10-12 years of life. Notes of chocolaty black cherries, forest, spice and earth are present in this medium to full-bodied, lush 2008. It is ideal for drinking over the next decade. (RP)
