The new release of Première Cuvée was disgorged in April of 2017 and hails from the base year of 2013. It was finished with a dosage of five grams per liter and offers p a lovely, still quite youthful bouquet of pear, apple, brioche a complex base of chalky soil tones and a nice touch of spring flowers in the upper register. On the palate the wine is crisp, full-bodied and nascently complex, with a lovely core, elegant mousse, bright acids and a long, focused and vibrant finish. This will be approachable early on, but as the notes below will attest, its true apogee is still many years down the road. (Drink between 2018-2050).
A whiff of flint precedes fresh lemon notes that pervade the entire wine with vivid freshness. The palate is taut and bright, with a rather salty, iodine savouriness. Lovely depth comes from the great proportion of reserve wines. The finish is brisk, with citrus and umami. (AK)
Paillard's NV Première Cuvée, disgorged January 2018 as Extra Brut, offers a fresh and delicate nose with bright fruit aromas intermixed with delicious brioche and vanilla notes. After three years on the lees, the palate is pure, straight and fresh, with a lovely mineral background, great elegance and finesse. That allows Paillard and his daughter, Alice, to create a wine with quiet persistence—a sophisticated style with limestone clarity to its honeyed peach flavors and floral bee-pollen scents. Juicy, round and clean, it’s the most approachable of Paillard’s Champagnes.

Lemon confit, white flowers, tangerine peel, chamomile and dried flowers all grace this taut, super-expressive NV Champagne. Medium in body and airy, with terrific depth the Premiere Cuvée is classy and inviting. Time in the glass brings out the breadth and textural richness of the red grapes in the blend.
