Siembra Azul tequilas are the product of industry veteran David Suro, who has been working in the tequila business for thirty years. He contracts his Siembra Azul tequila from the Vivanco family distillery in Arandas, otherwise known as NOM 1414 (the same as the ArteNOM reposado and Gran Dovejo tequila). I think our best tequilas at K&L are from Feliciano Vivanco, but it seems that David took his production methods to the extreme, specifying even the type of jima from the agave production - the process in which the penca (the agave leaves) are pulled from the ground. David is a big believer in using the jima to control the sweetness, bitterness, and ultimately the flavor of each tequila. The Reposado is aged in refill tequila barrels (taken after the anejo is aged in new oak), therefore not seeing the Bourbon influence that characterizes other producers taking barrels from Kentucky. It's wonderfully nuanced with soft almond skin notes and baking spices.
