I tasted five different bottlings of the very old Fino from Tradición, starting with the younger NV Fino Viejo Tradición from the May 2017 release. When they do the spring bottling the flor is really blooming (literally!) and the wines are more expressive. This feels very young and has plenty of yeasty aromas, hints of esparto grass and olives in brine. The palate is dry, intense and sharp but with the volume and concentration of old age. Each bottling sees 3,000 bottles filled. It's fascinating to see how the wine evolves in bottle, so there is no rush to drink it...if you can wait! (LG) 92+
Focused and pure, featuring citrus oil, salted brioche, tarragon and jasmine notes allied to a bone-dry frame. Lengthy, with a lingering stony accent. (JM)
Finely fragrant – salty of course but not just. Also dried herbs and soy. Powerful and savoury on the palate. Shows the complexity of age but the balance is excellent. Intense but not painful. Long and precise and saliva-producing. Worth the money for a special occasion and an appreciative audience. 17.5/20 points (JH)
