Heidrun is a meadery in Point Reyes Station that specializes in dry and crisp sparkling meads produced from single-varietal flower honeys. All of their meads are produced in a Champagne method--complete with riddling, disgorgement, and secondary fermentation--and are serious, Champagne-inspired sparklers with delicious honey flavors. The Hawaiian Lehua Blossom is a gorgeous mead with a peach and white flower nose and crisp apple and pear flavors. Very dry, very delicious, and with a very long finish.
