There is a hint of wet chalk stone on the nose, along with crisp apple and a touch of lemon. The palate then amplifies both the chalky impression and the creamy mellow richness of the apple and the autolysis. This is restrained but very classic, understated but deeply satisfying with its creamy mousse, a hint of stone and the fruit-accentuated backdrop. Pale straw with a persistent mousse. White stone fruit and fresh citrus on the delicate, precise nose. Very austere and clean in the middle, then slightly richer and toasty on the long, vibrant finish. A very vertical style of Crémant, this spends 36 months on the lees. About 90 percent Chardonnay and 10 percent Pinot Blanc, all from the Eichberg grand cru, in a colder microclimate near Husseren-les-Chateaux. A real Blanc de Blancs offering plenty of clarity and cut; will make a wonderful aperitif. 90+ (ID)
