Heidrun is a meadery in Point Reyes Station, CA, that specializes in dry and crisp sparkling meads produced from single-varietal flower honeys. All of their meads are produced in the Champagne method which is complete with riddling, disgorgement, and secondary fermentation. And they are serious, Champagne-inspired sparklers with delicious honey flavors. The Meadowfoam blossom honey has a creamy light vanilla quality with an undertone of clove. This is evident in the body and finish of the mead, which is brut dry, seductively refreshing, and austere. Meadery note: "This newest release is a delight to return from the sweet version of Oregon Meadowfoam Blossom that we produced last year to this elegant, brut dry, brightly acidic and Champagne-like release. The clove notes we expect from Meadowfoam honey are more subtle on the nose this year, as is the vanilla finish on the palate and there is a suggestion of jasmine. All of these elements are wrapped up in an delicate beeswax aroma that is seductive."
