Signorello has produced a rich, blackcurrant and spice-scented, full-bodied 1991 Cabernet Sauvignon Founder's Reserve that marries the finesse-filled, elegant style of Cabernet with considerable flavor authority. Medium-bodied, with layers of fruit, fine underlying acidity, and moderate tannin in the finish... I recently had the opportunity to visit the small Signorello winery and get a first-hand look at what Ray Signorello, Jr. is doing to produce such delicious albeit expensive wines. As with many highly committed California wine producers, he believes in utilizing wild yeasts, doing extensive "sur lees" aging for the whites, little racking, and, where appropriate, no fining or filtration, even for the white wines. The results have been impressive. Moreover, after tasting barrel samples of 1993 wines, I can unequivocally state that there has been no drop in quality. (RP)
