This non-vintage is based on the great 2008 harvest and composed of one-third each Pinot Noir, Chardonnay and Meunier. Before bottling, two-thirds is aged in large oak for a year, and then given five years of ageing on the lees. If you love spicy, complex, layered, textural Champagne like Bollinger, Tarlant and Krug, grab a bottle before it is gone! (Gary Westby, K&L Champagne buyer)

Wow, Trilogie overdelivers! Stonefruit up front with a buttery richness through the creamy palate, this higher-end Lamoureux still shines with bright acid and a super delicate bead, plus a coating mouthfeel. I paired this with less-than-elegant queso and salty chips while in Austin, TX, and the combination of lift and toastiness (thanks to five years on the lees) struck a lively, lovely balance.
