Siembra Valles Ancestral is a project conceived of a love of history and a desire to know tequila from its roots, celebrating its true identity and a curiosity of what the past once tasted like. With agave untouched by machine, the Ancestral boasts the complexity of nature's flavors and the skills of tequilero ancestry. It begins its journey through time in the pristine blue agave fields nurtured by the Rosales family’s team of expert cultivators, jimadores, and a lowland terroir. The fruitful plants can credit their rich flavors to a pesticide-free land and rich volcanic soils in the valleys of Arenal in the ranches of Tepezapote and Mesa Del Charco. The geographic terroir provides mineral, peppery, citrus characteristics to this expression. Using an ancient agave-roasting technique that has been lost in the tequila industry for about 100 years, reminiscent of a pit used for mezcal, the piñas are cooked over wood and lava rocks. The agave is then broken down with wooden mallets, an extraction method that has been around for at least 300 years, pre-dating the Tahona method. The first distillation takes place in a traditional copper pot alembic. The second, however, is transferred to a Filipino-style alembic made from pine wood, a completely untouched method in the industry. While copper preserves flavor and transfers heat efficiently in distillation faster and more efficiently, pine preserves flavor and also adds flavors of wood. The result is a blanco unlike any other.

A colleague handed me a glass, and I inhaled. Light notes of fresh cracked pepper and lovely hints of smoke were prevalent. I asked if it was a mezcal because of the sweet, fresh, smoke. I found out it was a tequila (obvious now) but the fact that it can be confused for a mezcal, speaks of its smokey complexity. I usually think that the smokey flavors weigh down mezcal but this one remains fresh, bright, and intense. If you need a new tequila for your home bar, you have to consider this one - trust me! Cheers!

For serious agave nuts, this is as close as Tequila will ever get to mezcal in that David Suro's team used many Oaxacan production methods to make this spectacular expression. In fact, in order to help consult on the project Suro brought up a number of Oaxacan distillers to help explain the process to the Tequileros. He said to me, "It brought a tear to my eye; seeing mezcaleros and Tequileros working side by side." This is a historic Tequila, but it's also an unbelievably delicious one. Huge notes of roasted agave, citrus, and spice coat the palate. At 50.1% there's a little kick on the finish as well. This isn't for people who want smooth. It's for people who want maximum flavors at all costs. In this case, David Suro paid the costs for that flavor. He spared no expense.

OK, I have to admit I'm more of a Scotch and Cognac drinker so a Tequila has to be off the charts to make me think I want to write up something. This is THE best Tequila I have ever sipped. Pure, bright and elegant are not always the descriptors you expect of a Tequila, but this fits the bill precisely. The nose is absolutely charming with a pure agave quality interlaced with aromas of lime, spice and a note of aromatic pine. On the palate it is wonderfully complex, a bit smoky, oaky and spicy with citrus and that beautiful quince like fruitiness great Tequila always shows me. The story is captivating enough to make you want to try it, but the experience will bring you back for more. Bravo!
