This blend of Chenin Blanc and Viognier starts with hand harvest and hand sorting into small boxes. Fermentation takes about three weeks at a controlled temperature of 24°C. The grapes are then pressed in a traditional basket press and the juice is aged for 24 months on the lees - which is an increase from the 16-18 months the winery was doing previous to the 2011 vintage. The winery believes that "(t)he additional 6 months of ageing just meant higher levels of stability and clarity without the sacrifice of any of the other qualities and the character of the wine."
