One of the classic examples of this traditional Belgian style, this wild-fermented wheat beer is a blend of old and young lambic aged in foudres and made only with aged hops. It pours a hazy golden color, with upfront earthy aromas of barnyard, leather and yeasty funk that are grounded in tones of lemon peel, green apple and white grape. The palate is lively and full of nerve, picking up the medium body with flavors of sour apple and cider vinegar as well as bright carbonation. The earthiness returns on the back of the sip, allowing final, drying notes of white pepper, lemon pith and yeasty spice to linger long on the close. (LB)
